Her husband, Miguel Pastor, who is a trained chef, plays a crucial role in creating the delectable dishes at La Lola.
Beyond offering excellent food, La Lola has evolved into a community hub for the growing Spanish population in the Waterloo region. Stankiewicz highlighted the intentional cozy atmosphere of the restaurant, reminiscent of traditional tapas bars in Spain that encourage social interaction and community bonding.
The restaurant’s name, La Lola, pays tribute to the iconic Spanish figure Lola Flores, symbolizing the larger-than-life essence of Spanish culture. Stankiewicz aims to provide patrons with an authentic Spanish experience, honoring tradition and creating a welcoming space for people to gather, socialize, and enjoy genuine Spanish cuisine.
